Detail

            “Sacha inchi” is a source of oil and high protein. It is also rich in unsaturated fatty acids, especially Omega-3 (α-linolenic acid; ALA) and Omega-6 (Linoleic acid; LA). Therefore, sacha inchi seeds are often extracted for oil production. During the oil extraction process, the residue left behind, known as sacha inchi meal, retains its high protein content. This meal can be further processed or used to produce high-protein food products as alternatives to milk and animal meat for vegan and protein-conscious consumers. Researchers have developed formulations for producing sacha inchi tofu mixed with sacha inchi meal, suitable for consumption as an alternative to milk and animal meat for vegan and protein-conscious consumers.
