            Food for the elderly should have a soft, easy-to-chew texture preventing food from sticking in the throat. Commonly used products to increase thickness and smoothness available in the general market include gelling agents, thickening agents, or gums made from bland-tasting ingredients. Researchers have thus developed a method to prepare gel-forming substances from mushrooms without the need for heat, which instantly thickens liquids upon dissolution without requiring heat.

Technology strengths

No heat is required in the gel preparation process.
